Being British, I definitely feed your pain with the shortbread thing! <br /><br />I am not a huge fan of Earth Balance in baking either - in most recipes the taste is too prominent. I do use Becel vegan margarine in those instances even though it's not exactly the world's best ingredient. Thanks for this recipe! Unfortunately, my attempt at vegan shortbread was a complete fail (I love Earth Balance, but it it didn't cut it in the shortbread), but these look great!CCnoreply@blogger.com
